Peppers Stuffed with Ground Meat, Potato, and Cheese

Ingredients
6 -7 Bell peppers
2 -3 Large potatoes or about 10 small yellow potatoes
3 Pounds ground beef
1 Sachet of seasoning with annatto Goya
Adobo of your choice (I recommend the complete Badia brand seasoning)
1 Tablespoon chicken or beef broth powder (or a sachet or cube)
3 Tablespoons sofrito
1 Can tomato sauce
Grated cheese to taste
Olive oil
- Utensils
Cutting board
Knife to cut the potato
Small knife to cut the top of the pepper
Spoon for the sofrito and tomato sauce
Broken spoon to serve the meat on the peppers
Large deep frying pan with lid
Baking sheet covered with aluminum foil
Spoon or fork to move the meat while cooking (you can use a pasta server)

Recipe Instructions
- Season the ground beef to your liking.
- Wash the peppers and cut off the tops. Take out the seeds inside. Leave them aside while we prepare the meat.
- Wash the potatoes and cut them into small cubes, the smaller the potatoes, the faster they cook.
- In the pan, add a little olive oil and heat over medium heat.
- When it is hot, add 3 tablespoons of sofrito and sauté for about 2-3 minutes, stirring constantly.
- Add the tomato sauce, the sachet of seasoning, and the tablespoon of powdered chicken or beef broth and sauté for about 2 minutes, stirring constantly.
- This is the sauce in which we will cook the ground meat
- Add the beef and make sure to mix well with the sauce.
- Add the potatoes and mix well.
- Cook over medium heat, covered, for about 15-20 minutes or until the ground beef is a dark brown color.
- When the meat is almost ready, preheat the oven to 350oF.
- Stuff the peppers with the ground beef.
- Put grated cheese on top.
- Bake for 30-35 minutes. Adjust the cooking time according to your taste. If you like your peppers firmer, bake for 30 minutes. If you want it softer, let it bake for another 5 to 10 minutes.
- Now, put the oven on broil and leave the peppers for 1-2 minutes. Make sure the cheese doesn’t burn.
- Remove the peppers from the oven and let them cool for about 5 minutes. Ready, serve your peppers with white rice or accompany them with some good tostones.
