Ingredients

  • 1.5 lb Baby Dutch yellow potatoes

  • Salt

  • Dry oregano

  • Dry cilantro

  • Dry rosemary leaves

  • Olive oil (spray or liquid) or butter

  • Utensils
  • Oven

  • Baking sheet

  • Aluminum foil

  • Cutting board

  • Knife

Recipe Instructions

  • Preheat the oven to 400oF.
  • Wash and dry the potatoes.
  • Cut the potatoes in half. For large potatoes, cut them horizontally.
  • Cover the baking sheet with aluminum foil.
  • Spray the baking sheet with oil (or butter).
  • Sprinkle salt onto the baking sheet.
  • Sprinkle oregano, cilantro, and rosemary.
  • Place the potatoes cut side down. Rub the potatoes into the salty/spices mix on the bottom of the pan.
  • Spray the top of the potatoes with more oil. Sprinkle salt, oregano, cilantro, and rosemary over the potatoes.
  • Bake for 25 minutes on the bottom rack of the oven.
  • When ready, let them cool for about 10 minutes.
  • You can serve these potatoes with some guacamole, your preferred sauce, or a hot sauce.
