Ingredients
5 eggs at room temperature
1 cup sugar
1 can condensed milk
1 can evaporated milk
1 tsp vanilla extract
8 oz cream cheese at room temperature
Water for the Bain-marie (water bath)

Large baking pan for the Bain-Marie
Baking pan for the flan (6 inch)
Mixing bowl (2)

Measuring cup: 1tsp
Recipe Instructions
- Mix a can of evaporated milk, a can of condensed milk, 5 eggs, and 1 tsp vanilla extract at medium to medium-high speed for about 1 minute or until well blended.
- Transfer the ingredients to another bowl.
- Add cream cheese to the mixing bowl and mix at medium or medium-high speed for about 1 minute until the cream cheese looks creamy.
- Add the other ingredients and mix at medium-high speed for another minute.
- Use the spatula to ensure all ingredients mix well and you don’t leave ingredients on the walls of the bowl.
- Set aside while you caramelize the sugar.
- On the stove, cook 1 cup of sugar over low-medium heat until caramelized. Stir continuously with a spoon or spatula. You can add 1 tbsp of water to the sugar if you want, but it is not required.
- Pour the caramelized sugar into the baking pan. Move the pan in a circular motion to ensure the caramel coats the sides of the pan.
- Pour the flan mix.
- Place the baking pan inside the large baking pan.
- Add hot water to the large pan until the water is about 1 inch tall.
- Preheat the oven to 350oF.
- Bake on the Bain-Marie for 50-60 minutes.
- Check if the flan is well cooked by inserting a toothpick. If the toothpick comes out clean, the flan is ready.
- Let the flan cool, and then place it in the refrigerator for a couple of hours.
- Once cool, use a knife to detach the flan from the pan.
- Place a plate over the pan and flip it. The flan should come right off the pan and onto the plate.
- Cut and serve.
- Your flan is now ready for you to enjoy!
